Sea Urchins

INGREDIENTS

8 whole eggs
8 sea urchin roes
Salt
Pepper
40g butter
Young carrot leaves
Chives chopped
Chervil
Young celery leaf

Method

Whisk the eggs and season

In a frying pan, add the butter and scramble the eggs.
Half way through add the urchin roes and cook.

Serve back in the clean sea urchin shells and garnish with the leaves.
