Sea Urchins


8 whole eggs
8 sea urchin roes
40g butter
Young carrot leaves
Chives chopped
Young celery leaf


Whisk the eggs and season

In a frying pan, add the butter and scramble the eggs.
Half way through add the urchin roes and cook.

Serve back in the clean sea urchin shells and garnish with the leaves.
