Baked Cod in Potato & Leak Soup, A Recipe from Royal Greenland

  • 4 pcs. cod fillets
  • butter
  • Salt and pepper
  • 400 g of potato
  • 2 leeks
  • 3 shallots
  • 8 cups chicken broth
  •  1 cup cream
  • 1 bay leaf
  • 0.5 bunch chives
  • 1 cup grapeseed oil
  • croutons


  • Thaw the cod fillets and place in a greased ovenproof dish.
  • Season with salt and pepper and place a small dollop of butter on top of each fillet
  • Bake the cod in the oven at 160 ° C for approx. 10 minutes
  • Peel potatoes and cut them into cubes.
  • Cut the white parts of the leeks into slices and rinse them well.
  • Peel onions and cut them into slices.
  • Sauté the onions in a little oil, once they are transparent add the leeks and potatoes
  • Sauté leeks and potatoes lightly and add the chicken broth and bay leaves
  • Simmer until the potatoes are cooked completely. approximately 20 min.
  • Remove bay leaves and blend the soup
  • Add the cream and season with salt and pepper
  • Blanch the chives in boiling water
  • Mix the chives with the oil
  • Cut the bread into cubes and toast in the oven until crisp.
  • To serve, place the cod in a shallow dish, and pour the soup over it.  Add chives and croutons on top .
